3 cups blackberry juice
5 cups of sugar
1/2 cup lemon juice
1 packet certo pectin

In a large pot, with some water to cover, bring blackberries to float in their juices. DO NOT STIR, only shake about occasionally. Pour blackberries into a pillowcase and suspend to drip into a large bowl. Recover three cups of juice. Add juice, sugar and lemon together and stir in a large pot. Heat to a rolling boil and hold there for one minute, reduce heat. Pour immediately into sterilized jars, cap with sterilized lids and screw on sterilized rings as tightly as possible. Set onto a tea towel to cool.

Makes 6 and one half jelly jars (perfect for testing the next day !)
